Do you stress the importance of hand washing to your restaurant's employees, but they still don't wash as often as they should?  Have you tried getting the message across so many times that you'd rather bang your head against the wall than bring it up again? 

You're not alone.  In fact, the problem is so pervasive that researchers at Kansas State University conducted a study to find out excactly why it is such a hard message to get across - and to come up with strategies that really can change behaviors for the good.

According to the study, some of the most common reasons restaurant employees choose to disregard critical hygiene practices is that they're rushed for time, the find that washing can be inconvenient, and they're simply not trained to do it properly.  The authors then offers simple tips to help your employees improve their food safety practices.
